Viral Dubai Chewy Cookie - Can be Veganised

Dubai Chewy Cookie has been going viral pretty crazily everywhere but the typical one sold outside is not vegetarian due to it being made from marshmallow and contains egg. So I thought what if I used vegan marshmallows?
And so I did, In fact this can be veganised as the pistachio cream can be homemade vegan and also found on shopee and the milk powder can be replaced with oat powder/almond powder or be even omitted. So here's my recipe that I made my Dubai Chewy Cookie with!
Ingredients (makes 6 Chewy Cookie)
50g toasted kataifi
100g pistachio cream
Some Butter
2x M&S vegan marshmallow
~2.5 Tbsp cocoa powder
1 Tbsp milk powder (use oat powder/almond powder to veganise this) [Optional]
Some oil for lightly greasing
Steps:
Add the toasted kataifi in a bowl and stir in the pistachio cream. Mix until evenly mixed.
Use a cookie scoop and scoop out the filling onto a parchment paper. When all the filling is scooped up, place them into the freezer to firm it up
While the filling is in the freezer, make the chocolate marshmallows
Add the butter and marshmallows to a non-sick pan and heat gently over low heat while stirring
When the edges of the marshmallows soften, stir in the cocoa powder and milk powder. Stir until smooth. When it is more or less melted, remove from heat as it would be difficult to manage if it is too hot
Immediately pour the melted choc marshmallow mixture ono a lightly oiled parchment paper/bowl
Take the prepared filling out of the freezer.
Divide the choc marshmallow into even pieces and use lightly oiled hands (or wear gloves and oil them) to press the choc marshmallow into flat rounds
Place the ball of the prepared Dubai filling in the middle of the choc marshmallow, enclose and pinch to surround the filling
Finish by dusting all the cookies generously with cocoa powder
Let it rest for 30 minutes before enjoying it!
The Verdict
My first attempt pretty sweet using only a lil chocolate powder (probably the sweetness of the marshmallow), but it was pretty nice! I love the kataifi and pistachio combination! About 10 of my friends got to try it and some said its pretty sweet but nice after and some thinks the sweetness is just right so it depends on the extent of your sweet tooth!
My second attempt was the recipe above. Will update the verdict in time to come!
