Vegan Butter Tteok

After the viral dubai chewy cookies, the next viral thing online was butter tteok so I thought to give it a try as well! Many recipes has egg so decided to try using tofu to replace it and so here's my vegan buter tteok. It's so interesting, not too sweet, crispy on the outside and chewy on the inside XD


Ingredients (makes 12-15 Butter Tteok depending on tray size)

  1. 135g glutinous rice flour

  2. 10g rice flour

  3. 30g tapioca starch

  4. 80g silken tofu

  5. 60g sugar

  6. 30g melted butter

  7. 185g soy milk

  8. Salt


Steps:

  1. Melt the butter in a pan

  2. Mix all other ingredients in and blend

  3. Brush the pan with a layer of butter. Then, pour the mixture in till 3/4 filled.

  4. Bake the butter tteok at 190 Degree Celsius for about 45 minutes


It's really simple! I probably took about 2 hours for this. Let me know how it turns out for yours and what I can try next maybee. Just that when its nicer when eaten hot as it will still be crispy on the outside.


Tried another time but with 150g of tofu coz I needed to clear it with 70g of sugar 35g of tapioca starch and 180g of glutinous flour and baked for like 40minute at 200 degree celsius and it was abit charred. However, my friend love it as well as theres a 香味 to it.
